Reflecting on an Unforgettable Journey: Discovering the Best of Australian Wagyu

Australia and the Australian Wagyu Association welcomed us with open arms, treating us to an extraordinary experience that exceeded our expectations. From delightful culinary experiences to invaluable education and thought-provoking challenges, our trip was truly a once-in-a-lifetime adventure. As we settle back into our routines in the States, we find ourselves cherishing the memories, laughter, and lessons learned during our time Down Under.

Embracing the Power of Data:

Throughout the conference, one word resounded louder than any other: data. The Australians have paved the way for a data-driven industry, utilizing vast amounts of carcass data to support their Estimated Breeding Values (EBVs). Inspired by their approach, we are now more dedicated than ever to enhance our own data collection, striving to establish the accuracy of our herd while sharing our knowledge with fellow American producers. By collectively contributing to the Breedplan Database, we can elevate the Wagyu breed in the United States.

Fostering Relationships and Collaboration:

Witnessing the interactions among the world’s finest Wagyu producers was a remarkable experience. Despite competing in the same arena, they displayed a genuine willingness to share their successes and insights from their operations. This spirit of collaboration is something we hope to foster within the American Wagyu community. The demand for Wagyu in the United States is immense, and by embracing cooperation, all Wagyu producers can find success and meet this growing demand.

Gratitude for Unforgettable Connections:

We will forever cherish the new business relationships and friendships forged during our two weeks in Australia. Laughter echoed through the days and nights, sleep was a rare luxury, and we danced like never before. The knowledge shared by incredible producers left an indelible mark on us. We eagerly anticipate the opportunity to visit our Wagyu friends around the world and tour their stunning operations. Equally, we can’t wait to welcome them to our farm in North Carolina, where we will continue to learn, grow, and produce the finest Wagyu genetics and beef in the world.

Unforgettable Memories:

We couldn’t help but reminisce about the fun-filled moments we shared along the way. From the #425forever camaraderie with Reid Martin, Dave Dreiling, and Andrew Coates to getting #wagyuwasted with Reid Martin, each memory is etched in our hearts. We’ll always remember the humorous touch of adding tomato sauce to the Mayura steak, courtesy of Cameron Hewitt (HP Wagyu) and Anthony Winter (Macquarie Wagyu). And who could forget the beer-loving duo of Matt from Sumo Wagyu and Eric Fraser? Our gratitude extends to Marcel Merz for the amazing wine and cheese, and we’re delighted to call Oscar Saez (Toro Wagyu) our newfound best friend. Join us on the WILD journey by following Wilders Wagyu and #staywild.

Leaving Australia Inspired:

Our time in Australia has left us motivated to put into practice the wealth of knowledge and insights we gained. With an unwavering commitment, we strive to produce the best Wagyu genetics and beef in the world. As we embark on this journey, we carry the spirit of Australia with us, forever grateful for the experiences that have shaped us and the connections that will last a lifetime.
